Cooked Duck with Indian Taro (Vịt Nấu Khoai Môn)

Ingredients:
½ duck (300 – 400gr), chopped into small pieces
300gr Indian Taro
2 balls red soya cheese (Chao) – Buy at Vietnamese Markets.
2 balls white soya cheese
Spices: salt, fish sauce, Maggi’s stuff, purple onion, pepper, garlic
Coconut juice
Vermicellu, salad, spring onion
Ginger, white wine (to clean duck)
For sauce: 2 balls white soya cheese, sugar and lemon juice.
Process:
Step 1: Clean ginger, smash it and mix with white wine. Then bring this mixture to clean duck meat. Scrape mixture around duck meat and wait about 20 minutes. Next, clean again with water. Wait to dry.
Step 2: Marinate duck meat with sliced purple onion + minced garlic + white soya cheese + red soya cheese + 1 teaspoon salt + 1 teaspoon sugar + ½ teaspoon Maggi’s stuff + pepper. Mix well and wait about 2 – 3 hours. Wait as long as you can, because the spices can absorb into duck meat, and will create one of stunning Vietnamese Chicken Recipes.
Step 3: Add ½ tablespoon oil into pot, wait to hot, add more minced garlic and fry until it is fragrant. Then, pour duck meat (in step 2) into pot and cook with large heat. When it boils, reduce the heat to small and cook more 20 minutes.
Step 4: Peel off the cover of indian taro, clean carefully and sliced into medium pieces.
Step 5: Making sauce: Add 2 balls white soya cheese + 1 teaspoon sugar + some tears of lemon juive. Mix well.
Step 6: After 20 minutes cooking, add more coconut juice to cover all faces of duck meat. Continue cook with small heat. Season to suit your flavor. Cook about 30 – 45 minutes.
Step 7: Then, add more sliced taro into pot to cook as well.
Step 8: Cook until taro becomes soft. Season for the last time to suit your flavor. Turn off the heat and sprinkle sliced spring onion on face.
